Ingredients:
Fish Head - 1, medium, cleaned and prepared
Turmeric Powder - 1 tsp
Oil - 2 tblsp
Cumin Powder - 1 tsp
Coriander Powder - 1 tsp
Chilli Powder - 1 tsp
Tomatoes - 2, peeled and chopped
Green Chillies - 5, deseeded and halved
Ginger - 1 tblsp, grated
Tamarind Pulp - 1 tblsp
Coconut Milk - 6 cups, medium consistency
Bhindi - 10, halved
Brinjals - 10, quartered
Cherry Tomatoes - 4
Salt as per taste

Method:
1. Rub the turmeric and a little salt into fish.
2. Marinate for 15 minutes.
3. Heat oil in a pan over medium heat.
4. Add the powdered spices and fry for 30 seconds.
5. Add tomatoes, chillies, ginger and tamarind.
6. Fry well.
7. Cover the pan and cook for 5 minutes.
8. Add half of the coconut milk and bring to boil on medium heat.
9. Add the marinated fish head, bhindi and brinjals.
10. Cover and cook until almost done.
11. Add the remaining coconut milk and cherry tomatoes.
12. Cook till done.
13. Serve hot with cooked rice.
