Ingredients:
Eggs - 6, beaten
Cheese - 100 gms
Mushrooms - 4, sliced
Capsicum - 1, chopped
Tomatoes - 4, peeled and chopped
Tomato Paste - 2 tblsp
Parsley - few, chopped
Butter - 2 tsp
Salt
Pepper
Method:
1. Add the tomatoes, parsley, tomato paste, salt and pepper to the eggs.
2. Mix well.
3. Heat 2 tsp of butter in a frying pan.
4. Pour the omeletter mixture.
5. Spread the mushroom, capsicum and cheese over the omeletter.
6. Cover the pan and let the omeletter cook for about 5 to 10 minutes.
7. Serve hot.
