Veinchana Royyalu (Curried Prawns) Recipe

Ingredients:
Prawns - 800 gms, medium size, deveined and cleaned
Onions - 5 to 6, finely sliced
Ginger - 4 tsp, ground
Garlic - 4 tsp, ground
Salt as per taste
Turmeric Powder - 2 tsp
Juice of 4 Limes
Oil - 1 cup
Cardamoms - 6 to 8
Cloves - 6 to 8
Aniseed - 1/2 tsp
Coriander Powder - 3 to 4 tsp
Red Chilli Powder - 2 tsp
Green Chillies - 7 to 8
Coriander Leaves - 1 bunch, chopped, for garnish
Tomatoes - 2 to 3, chopped (optional)

Method:
1. Mix half the ginger, garlic, salt and tumeric with lime juice.
2. Marinate the prawns in this mixture for 20 to 30 minutes.
3. Heat oil in a pan.
4. Fry the cardamoms, cloves and aniseed till cardamoms darken.
5. Add onions and fry till light brown.
6. Add the remaining ginger and garlic. Fry lightly.
7. Add coriander and chilli powder.
8. Add the tomatoes and fry for about 2 minutes.
9. Add 1 to 2 cups of water, prawns and green chillies.
10. Cook for about 5 to 6 minutes.
11. Add salt as per taste.
12. Garnish with coriander leaves.
13. Serve hot with rice.
