Tom Kha Kai (Mildly Spiced Vegetable Soup) Recipe

Ingredients:
Coconut Milk - 2 cups
Mushrooms - 120 gms, sliced
Kha - 2 tbsp
Galangal - 5 1/2 tbsp
Lemon Grass - 80 gms, chopped
Red Chillies - 4, chopped
Fish Sauce - 3 tbsp
Lemon Juice - 4 tbsp
Green Coriander - 4 to 6 springs
Chilli Oil - 1 tsp

Method:
1. Heat the coconut milk in a pan.
2. Add the mushrooms, Kha, galangal, lemon grass and red chillies.
3. Stir in the fish and lemon juice.
4. Boil for 5 to 6 minutes and then remove from the heat.
5. Serve hot, garnished with green coriander and chilli oil.
