Stuffed Kulcha Recipe

Ingredients:
For the Kulcha:
Maida – 2 cups
Baking Soda – a pinch
Ghee – 3 tblsp
Milk – 1/2 cup
Ghee or Oil preparing the kulchas
Salt as per taste

For the Stuffing:
Potatoes – 2 cups, mashed
Oil – 2 tsp
Red Chilli Powder – 1/2 tsp
Dry Mango Powder (Amchoor) – 1/2 tsp
Salt as per taste

Method:
1. To make the filling, mix all the ingredients together and keep aside.
2. To make the kulcha, mix all the ingredients in a mixing bowl.
3. Adding only little water knead into a dough which can be rolled out easily.
4. Divide the dough into six portions.
5. Roll out each portion into a chapatti.
6. Spread ghee lavishly on this and fold in small folds and gently lift these folds and shape into a round ball again.
7. Roll out this round ball again to 2 inch in diameter and place a portion of the filling in the centre.
8. Close from all the sides and shape into a round one again.
9. Gently roll out this stuffed round into a chapatti.
10. Fry on a tava on very low heat, adding ghee or oil from time to time.
11. Turn over to cook both the sides of the kulchas.
12. Prepare all the kulchas in this way.
13. Serve with side dish of choice.

Note: This needs a lot of patience and the slower you cook each kulcha adding ghee or oil the flaky you will get your kulchas.
