Vegetable Kebabs with Yogurt Dip Recipe
Ingredients:
Eggplants/Brinjal - 2, cut into big pieces
Zucchini - 2, cut into chunks
Yellow Capsicum - 1
Red Capsicum - 1
Carrot - 1, cut into circles
Broccoli Florets - 6 to 8
Cherry Tomatoes - 10 to 12
Red Onions - 2, cut into quarters
For the Marinade:
Garlic - 1 clove, crushed
Coriander - 1 tsp, ground
Cinnamon - 1 tsp, ground
Honey - 2 tsp
Salt to taste
For the Dip
Yogurt - 1 cup
Coriander Leaves - handful, chopped
Mint Leaves - handful, chopped
Salt as per taste
Pepper to taste
Method:
1. Mix the ingredients for the marinade and place in a mixing bowl.
2. Put the vegetables in the marinade and leave aside for 10 minutes.
3. Put on skewers and grill till the vegetables are tender.
4. Serve the kebabs on the skewers with yoghurt dip.
Note: If you do not have Cherry Tomatoes, you can use regular tomatoes as well. Remove the seeds and cut into quarters.
