Sukha Jhinga (Dry Spiced Prawns) Recipe
Ingredients:
Prawns - 500 gms, shelled and deveined
Oil - 1/2 cup
For the Marinade:
Garlic Paste - 2 tsp
Cumin Powder - 2 tsp
Red Chilli Powder - 3 tsp
Green Chillies - 8, finely chopped
Coriander Leaves - 4 tblsp, finely chopped
Juice of 1 Lime
Salt - 3/4 tsp
For Seasoning:
Oil - 4 tblsp
Cumin Seeds - 1/4 tsp
Curry Leaves - 10
Method:
1. Wash the prawns and allow it to dry.
2. Combine the marinade ingredients and rub them into the prawns.
3. Leave them to rest for 2 hours in the fridge.
4. Heat oil in a pan on moderate heat.
5. Add the prawns and marinade into the oil.
6. Fry till they lose their translucency but remain crunchy, for about 4 to 5 minutes.
7. Heat the oil for seasoning in another pan.
8. Add the cumin seeds and curry leaves.
9. Pour it on to the fried prawns and serve immediately.
