Vegetable Gravy Recipe
Ingredients:
Brinjal - 5
Potato - 2
Onion - 2
Tomato - 4
Garlic - 2
Curry Leaves - 2 tsp, chopped
Coriander Leaves - 2 tsp, chopped
Coconut - 1 cup, grated
Mustard Seeds - 1/2 tsp
Fennel Seeds - 1 tsp
Bay Leaf - 2
Red Chili - 6
Coriander Seeds - 1 tblsp
Cumin Seeds - 1/2 tsp
Oil - 3 tsp
Salt as per taste
Method:
1. Grind coconut, red chilli, coriander seeds, cumin seeds and 1/2 tsp fennel seeds together smoothly.
2. Chop brinjal, potato, tomato and onion into small pieces.
3. Pour oil in a pan and heat it.
4. Fry mustard seeds.
5. Add fennel seeds and bay leaf along with onion and garlic pieces.
6. Add the vegetable pieces with salt and fry them well.
7. Mix sufficient water with curry and add coriander leaves.
8. Boil the gravy until a fine aroma arises.
9. Serve hot with plain rice.
