- Mutton Biryani with Vegetables
Mutton Biryani with Vegetables Recipe
Ingredients:
Mutton - 500 gms, boneless and cut into thin strips
Ghee - 1/2 cup
Onion - 1, large and chopped
Tomato - 1, large and chopped
Salt - 1 1/2 tsp
Carrot - 1, medium and diced
French Beans - 10, cut into 1 inch pieces
Cauliflower Florets - 3 to 4
Green Peas - 1/2 cup, shelled
Green Chillies - 2 to 3, chopped
Coriander Leaves - 10 spirgs, chopped
Black Cardamoms - 2
Green Cardamoms - 3 to 4
Whole Black Peppercorns - 4
Clove - 1
Cinnamon - 2 inch stick
Bay Leaf - 1
Rice - 1 cup
For the Marinade:
Ginger Garlic Paste - 2 to 3 tblsp
Garam Masala Powder - 2 tblsp
Yogurt - 2 tblsp, whisked
Method:
1. Wash meat and set aside to drain.
2. Combine the marinade ingredients with 2 tblsp of ghee and rub into the meat.
3. Set aside to marinate for 3 to 4 hours.
4. Heat remaining ghee in a heavy based pan over moderate heat.
5. Add onion and tomato and brown for 5 to 7 minutes.
6. Add the meat with its marinade and 1 tsp of salt.
7. Stir-fry for about 15 minutes or till meat is tender.
8. Add a little water if the meat becomes too dry.
9. Mix in the vegetables, chillis, coriander leaves, whole spices and bay leaf.
10. Stir over low heat for about 2 minutes till well blended.
11. Remove from heat and set aside.
12. Wash rice and soak in water for 15 minutes.
13. Drain and add to the pan.
14. Stir till translucent.
15. Mix in 1/2 tsp of salt and 2 cups of water.
16. Cook rice for 10 to 15 minutes till water is absorbed and rice is tender.
17. Stir lightly.
18. Serve hot.
