Thai Curry Recipe
Ingredients:
Capsicum - 1 big cup (red, yellow and green), chopped
Cauliflower - 1 cup
Carrot - 1 cup
Onion - 1 cup
Grated Paneer - 1 cup
Baby Corn - 1 cup
Coconut Milk - 1 cup
Garlic - 5
Ginger - a small piece
Groundnuts - 1 cup
Basil Leaf - few
Oil
For Masala Paste:
Red Chilli - 5
Ginger - small piece
Garlic - 5
Bay Leaf - 1 or 2
Cinnamon - 1
Method:
1. Heat oil in a pan and fry the onion.
2. Add carrpt, cauliflower and capsicum.
3. Add water and let the vegetables boil.
4. Once cooked, add coconut milk.
5. Add salt.
6. Grind the masala paste ingredients with a little water.
7. Add the ground paste and grated paneer.
8. Allow it to simmer for 10 to 15 minutes or till the paneer is spread evenly.
9. Garnish with baby corn and basil leaf.
10. Serve with rice or with roti.
