Sarson Champ Biryani Recipe
Ingredients:
Mutton Chops - 500 gms
Ghee - 1/4 cup
Cumin Seeds - 1 tsp, roasted and ground
Green Chillies - 3 to 4, finely chopped
Onion - 1, large, minced
Rice - 1 cup
Salt - 1/2 tsp
For the Marinade:
Mustard Seeds - 4 tblsp
Onion - 1, medium, minced
Unripe Papaya Paste - 2 tblsp
Coriander Leaves - 1/2 cup, minced
Salt - 1 tsp
Ghee - 1/4 cup
Method:
1. Wash chops and set aside to drain.
2. Grind mustard seeds and soak in 2 tblsp of water for 10 minutes.
3. Combine with the remaining marinade ingredients and rub into meat.
4. Set aside for 3 hours.
5. Heat ghee in a pressure cooker over moderate heat.
6. Add cumin seeds and chillies.
7. When cumin seeds splutter, add onion and fry till golden brown.
8. Add chops and stir-fry for 5 to 6 minutes.
9. Close cooker and cook for 15 minutes after it reaches full pressure.
10. Wash rice and soak in water for 15 minutes.
11. Drain and add to the cooker.
12. Stir till rice turns translucent.
13. Mix in 1/2 tsp of salt and 2 cups of water.
14. Cover cooker with a flat lid and put a weight on it.
15. Cook over moderate heat for 10 to 15 minutes till water is absorbed and rice is tender.
16. Serve hot.
