Butter Badusha Recipe
Ingredients:
Maida - 2 cups
Cooking Soda - 2 tsp
Kesar Yellow Colour - 1/2 tsp
Saffron - 3/4 tsp
Cardamom Powder - 3/4 tsp
White Butter - 1/2 cup, fresh
Oil - for deep frying
Ghee
For Sugar Syrup:
Sugar - 1 1/2 cup
Water - 3/4 cup
Method:
1. Sieve maida and cooking soda together.
2. Add kesar yellow colour, crushed saffron, cardamom powder and butter to the flour.
3. Mix till it blends properly.
4. Sprinkle water and knead to a stiff dough.
5. Make medium sized balls.
6. Flatten and press in the centre.
7. Deep fry in moderate hot ghee few pieces at a time in reduced flame.
8. Turn once and cook till crisp and golden.
9. Prepare sugar syrup of one string consistency.
10. Dip the fried badusha's in hot syrup and arrange on a flat plate.
11. Decorate with sliced nuts before it dries up.
