Malai Kofta Curry Recipe
Ingredients:
Carrot - 100 gms
Beans - 100 gms
Peas - 100 gms
Potatoes - 100 gms
Corn Flour - 2 tblsp
Onions - 2
Tomatoes - 1/4 kg
Bread Crumbs - 2 tblsp
Ginger - 1 inch piece
Garlic Flakes - 10
Cinnamon - 1 one inch stick
Cloves - 5
Fresh Cream - 1 1/2 cup
To make Paste:
Cashewnuts - 1 cup
Poppy Seeds - 1 tblsp
Method:
1. Cut onions into thin long pieces.
2. Blanch tomatoes in hot water, remove the skin and make into a paste.
3. Cut all the vegetables very finely and steam them in a pressure cooker.
4. When it is cooled, add 2 tblsp of corn flour, bread crumbs, salt and little chilli powder.
5. Mash and make balls.
6. Flatten it a little with hand and deep fry in hot oil.
7. Keep aside.
8. Make a paste of ginger and garlic.
9. Heat 3 tblsp of oil or ghee in pan.
10. Add cinnamon, cloves, ginger garlic paste, onions and fry.
11. When it turns into a golden brown, add turmeric powder, chilli powder, salt, dhania powder and then tomato puree.
12. Cook for a few minutes.
13. Mix the ground cashews, poppy with 3/4 cup of cream.
14. Pour enough water and cook until thick.
15. Cook for 5 to 10 minutes and remove from fire.
16. To serve, arrange koftas in the serving plate, pour half of the beaten cream on top.
17. Pour the hot gravy on top.
18. Sprinkle coriander leaves and Serve hot.
