Rich Vegetable Jalfrezi Recipe

Ingredients:
Peas - 1/2 cup
Carrot - 1
Beetroot - 1
Beans - 1/4 cup
Potato - 1, medium size
Cabbage - 1/2
Salt as required
Fresh Curds - 2 cup
Oil - 2 tblsp
Cardamom - 3
Cinnamon - 3
Garlic - 2 pods
Turmeric Powder - 1/2 tsp
Green Chillies - 4, cut into pieces
Chilli Powder - 1 tsp
Coconut Extract - 1/2 cup

Method:
1. Wash and cut the vegetables into small pieces.
2. Pressure cook until one whistle in a cooker.
3. Strain water.
4. Heat oil in a kadai.
5. Fry cardamom, cinnamon, garlic and chillies.
6. Add vegetables along with chilli powder, salt, coconut extract and curd.
7. Simmer for 10 minutes.
8. Garnish with coriander leaves.
9. Serve hot.
