South Sea Noodles Recipe

Ingredients:
Vermicelli or fine Noodles - 225 gms, cooked
Oil - 4 tbsp
Onions - 2, medium, sliced
Bacon Rashers - 4
Shrimps - 2 tbsp, dried, soaked
Curry powder - 2 tbsp
Salt to Taste
Chicken Stock - 3/4 cup
Oil - 2 tbsp
Prawns - 225 gms, shredded
Garlic Cloves - 2, chopped
Spring Onions - 4, chopped
Soy Sauce + Hoisin Sauce - 1 tbsp
Dry Sherry - 1 tbsp
Parsley - 2 tbsp, freshly chopped

Method:
1. Soak the shrimps in boiling water for 30 minutes.
2. Drain and then chop.
3. Heat the oil in a kadai.
4. Add the onions, bacon and shrimps.
5. Stir fry for 1 minute.
6. Add the curry powder and salt and cook for another minute.
7. Add the chicken stock and rice vermicelli.
8. Mix well and cook for 2 to 3 minutes.
9. Transfer the mixture into a heated serving dish.
10. Heat the oil in a kadai.
11. Add the prawns and garlic and stir fry for 1 minute over high heat.
12. Add the remaining ingredients and pour the mixture over the noodles.
13. Serve hot, garnished with parsley.
