Saffron Chicken Recipe
Ingredients:
Chicken - 800gms, boneless, cut into 8 pieces
Oil - 1/2 cup
Bayleaves - 2
Cloves - 6
Green Cardamoms - 6
Onion Paste - 3/4 cup
Ginger Paste - 2 tbsp
Garlic Paste - 2 tbsp
Coriander Powder - 1 tsp
Cashewnut Paste - 5 tbsp
Yogurt - 1 cup, whisked
Salt to taste
White Pepper Powder - 1 tsp
Saffron - a pinch
Cream - 3/4 cup
Method:
1. Heat oil in a heavy bottomed pan.
2. Add bayleaves, cloves and cardamoms.
3. Saute until the cardamoms change colour.
4. Add onion, ginger and garlic pastes.
5. Stir fry till the oil separates.
6. Add coriander powder and Cashewnut paste.
7. Stir fry for 2 minutes.
8. Add the chicken and cook for 3 minutes.
9. Mix in the yogurt, salt, white pepper and saffron.
8. Bring to a boil.
9. Reduce heat and simmer until the chicken becomes tender.
10. Add the cream.
11. Serve hot.
