Murgh Mumtaz (Chicken Cooked in Tomato Gravy) Recipe

Ingredients:
Chicken - 1 kg, cut into boneless
Salt to taste
Ginger Garlic Paste - 4 tsp
Lemon Juice - 2 tbsp

For the Marinade:
Yoghurt - 1/2 cup, hung
Garlic Paste - 2 tsp
Cumin Powder - 1 tbsp
Red Chilli Paste - 2 tbsp
Oil - 5 tbsp
Salt to Taste

For the Tomato Gravy:
Tomatoes - 1 kg
Ginger Garlic Paste - 2 tbsp
Green Chillies - 10
Red Chilli Powder - 1 tsp
Cloves Powder - 1 tsp
Green Cardamom Powder - 1 tsp
Butter - 1 cup
Cream - 3/4 cup
Dry Fenugreek Powder - 2 tsp
Garam Masala - 1 tsp
Water - 2 1/2 cups
Salt to Taste

Method:
1. Rub salt, ginger garlic paste and lemon juice on the chicken pieces.
2. Keep aside for 20 minutes.
3. Prepare a marinade with the given ingredients and coat the chicken pieces with it.
4. Keep aside for 2 hours.
5. For the tomato gravy, heat a pot, and add all the ingredients except butter, cream, dry fenugreek powder and garam masala.
6. Cook for 30 minutes, mashing continuously.
7. Strain and return to heat.
8. Cook till the gravy thickens.
9. Add the remaining ingredients.
10. Cook for 5 minutes and remove from heat.
11. Skewer the chicken pieces and cook in a tandoor/oven/grill for 10 minutes and add to the gravy.
12. Mix well and serve.
