Chow Chow Kootu Recipe
Ingredients:
Tuvar Dal - 1/2 cup
Tumeric Powder - 1/2 tsp
Chow Chow (Chayote Squash) - 2 cups, peeled and cubed
Green Chilli - 1, chopped
Fresh Ginger - 1 tsp, minced
Cumin Powder - 1 tsp
Salt - 1/2 tsp
Fresh Coconut - 1 tblsp, grated
For Tempering:
Oil - 2 tblsp
Asafoetida Powder - 1/8 tsp
Curry Leaves - 4
Black Mustard Seeds - 1 tsp
Urad Dal - 1 tsp
Method:
1. Wash the tuver dal and drain.
2. Cook the dal with 1/4 tsp of turmeric powder and 4 cups of water till creamy.
3. Set aside.
4. Put the oil in a pan.
5. When the oil is hot add the asafoetida powder, mustard seeds, urad dal and curry leaves.
6. Fry over medium heat for about 30 seconds.
7. Add the chow chow, green chilli, ginger and 1/4 tsp of turmeric powder.
8. Stir well.
9. Add the cooked dal, cumin powder and salt.
10. Pour in 3/4 cup of warm water and stir well.
11. Cover and cook over medium heat for about 8 minutes till the chow chow is tender.
12. Stir in the coconut and remove from heat.
13. Serve with cooked rice.
