Prawn Soup Recipe
Ingredients:
Fresh Prawns - 250 gms, peeled and deveined
Spring Onions - 3 tblsp, chopped
Zest of 1/2 a Lime - grated
Lime Juice - 2 tblsp
Thick Coconut Milk - 1 cup
Black Pepper - 1/8 tsp
Cumin Powder - 1/8 tsp
Garam Masala Powder - 1/2 tsp
Salt - 1/2 tsp
Fresh Coriander Leaves - 3 tblsp, chopped
Fresh Ginger - 1/2 tsp, minced
Garlic - 1 clove, crushed
Green Chilli - 1, minced
For Garnish:
Spring Onions - 2 tblsp, chopped
Fresh Coriander Leaves - 2 tblsp, chopped
Method:
1. Wash the prawns and set aside to drain.
2. Boil 4 cups of water in a pan.
3. Add the spring onions and lime zest and simmer for 2 to 3 minutes.
4. Mix in lime juice, coconut milk, black pepper powder, cumin powder, garam masala powder and salt.
5. Stir well and simmer over medium heat for 3-4 minutes.
6. Stir in the coriander leaves, ginger and garlic.
7. Simmer over medium heat for 2 minutes.
8. When the mixture comes to a boil, add the prawns and green chilli.
9. Cook over medium heat, till prawns turn pink, for 2 to 3 minutes.
10. Garnish with spring onions and coriander leaves.
11. Serve hot.
