Aloo Gobi Sukhi Recipe

Ingredients:
Potatoes - 2 1/2 cups, medium, cut into quarters
Cauliflower - 2 1/2 cups, cut into small pieces
Oil - 1/3 cup
Bayleaves - 2
Green Cardamoms - 5
Red Chillies - 5, whole, cut into half
Onions - 1/2 cup, chopped
Cumin Seeds - 1 1/3 tsp
Ginger Paste - 2 2/3 tbsp
Garlic Paste - 2 2/3 tbsp
Turmeric Powder - 1 tsp
Red Chilli Powder - 1 2/3 tsp
Coriander Powder - 2 tsp
Tomatoes - 1 cup, chopped
Salt for Seasoning
Black Pepper - 5, crushed
Garam Masala - 3 tsp
Green Coriander - 1 tbsp, chopped
Ginger - 2 tsp, julienned

Method:
1. Heat the oil in a pan.
2. Add the Bayleaves, cardamoms, whole red chillies and cumin seeds.
3. Saute over medium heat.
4. Add the chopped onions, ginger garlic pastes, turmeric powder, red chilli powder and coriander powder.
5. Saute for 45 to 60 seconds.
6. Add tomatoes and cook for another 5 minutes.
7. Add the cauliflower and potatoes and cook over medium heat for 10 minutes.
8. Add 1 cup of water cover and cook for 10 minutes on low heat.
9. Season with salt, black pepper and garam masala and stir.
10. Serve, garnished with green coriander and ginger juliennes, as an accompaniment.
