Crispy Sesame Prawns Recipe
Ingredients:
King Prawns - 1 kg, deveined, shelled
Oil for frying
For the First Marinade:
Ginger Paste - 4 tsp
Garlic Paste - 5 tsp
White Pepper Powder - 1/2 tsp
Yellow Chilli Powder - 1/2 tsp
Lemon Juice - 1 tsp
For the Second Marinade:
Cheddar Cheese - 4 tbsp, grated
Carom Seeds - 1 tbsp
Cream - 4 tbsp
Green Cardamom Powder - 1/2 tsp
Mace Powder - 1/2 tsp
Gram Flour - 3 tbsp, roasted
Yoghurt - 1/2 cup
Sesame Seeds - 1/4 cup
Breadcrumbs - 1/2 cup, dried, powdered
Method:
1. Mix all the ingredients of the first marinade and rub on the prawns.
2. Keep aside for half an hour.
3. Squeeze the prawns gently to remove excess moisture.
4. Whisk together the ingredients for the second marinade (except sesame seeds and breadcrumbs).
5. Marinate prawns in this mixture for another 30 minutes.
6. Make a mixture of breadcrumbs and sesame seeds.
7. Coat the prawns with the mixture and chilli for 15 to 20 minutes.
8. Heat oil in a kadai, till it starts smoking.
9. Lower heat, fry prawns for 1 to 2 minutes.
10. Remove, drain and keep aside for 4 to 5 minutes.
11. Deep fry again till they are crisp and golden in colour.
12. Drain excess oil.
13. Garnish with lemon wedges.
14. Serve hot.
