Arisi Upma Recipe
Ingredients:
Extra Long Grained Rice (pachai arisi) - 1 cup
Toovar Dal - 1/4 cup
Black Peppercorns - 1 tsp
Cumin Seeds - 1 tsp
Dried Red Chillies - 2 to 4
Salt - 3/4 tsp
Ghee - 1 tsp
Fresh Coconut - 1/4 cup, grated
For Tempering:
Oil - 4 tblsp
Curry Leaves - 4 to 6
Dried Red Chillies - 2
Black Mustard Seeds - 1 tsp
Urad Dal - 1 tsp
Method:
1. Wash the rice and dal.
2. Soak them with the black pepper, cumin seeds and red chillies in 3 cups of water for 2 hours.
3. Drain and grind with 1 cup of water to a coarse consistency. Set aside.
4. For the tempering, put the oil in a frying pan over medium heat.
5. When the oil is hot but not smoking, add the remaining tempering ingredients.
6. Fry over medium heat, till mustard seeds splutter and urad dal is golden for about 30 seconds.
7. Add the coarsely ground rice and dal mix to the pan and stir.
8. Mix in salt and 1 1/2 cups of water.
9. Cover and simmer over medium heat, stirring frequently, till tender.
10. Stir in ghee and coconut.
11. Serve hot with chutney.
