Kurkuri Bhindi (Crispy Okra) Recipe
Ingredients:
Okra - 500 gms, cut lengthwise into 4 slices
Salt to taste
Red Chilli Powder - 1 tsp
Garam Masala - 1 tsp
Mango Powder - 1/2 tsp
Chaat Masala - 1/2 tsp
Gram Flour - 3 tbsp
Vegetable Oil for frying
Ginger - 1 1/2 tsp, julienned
Green Chillies - 2, sliced
Method:
1. Spread the okra on a flat dish and sprinkle salt, red chilli powder, garam masala, mango powder, and chaat masala.
2. Mix gently.
3. Now, add the gram flour and mix gently to coat evenly, preferably without adding water.
4. Divide the okra into 2 portions.
5. Heat the oil in a pan to smoking point.
6. Fry 1 portion of the okra mixture, separating each lightly with a fork.
7. Do not allow the slices to stick to each other.
8. Remove with a slotted spoon when both the sides are crisp and brown.
9. Similarly, fry the other portion.
10. Garnish with ginger and green chillies.
11. Serve hot.
