Ingredients:
Spinach - 1 kg, roughly chopped
Vegetable Oil - 4 tbsp
Dry Red Chillies - 8, cut in half
Onions - 8, sliced or chopped
Garlic - 4 tbsp, peeled, cut lengthwise
Red Chilli Powder - 1 tsp
Turmeric Powder - 1 tsp
Asafoetida - a pinch
Salt to taste
Method:
1. Heat the oil in a kadai to smoking point.
2. Reduce heat.
3. Add the dry red chillies, onions, garlic, red chilli powder, turmeric powder and asafoetida and stir fry for 2 to 3 minutes.
4. Immediately add the spinach and stir-fry.
5. Add salt, cover and cook on very low heat for 6 to 7 minutes.
6. Serve hot.
