Stir-Fried Spinach with Tomato Recipe

Ingredients:
Spinach - 1 kg, fresh or frozen, washed, roughly chopped
Tomatoes - 250 gms, chopped
Vegetable Oil - 4 tbsp
Dry Red Chillies - 8, cut in half
Cumin Seeds - 1 tsp
Onions - 1/2 cup, sliced or chopped
Garlic - 4 tbsp, peeled, cut lengthwise
Red Chilli Powder - 1 tsp
Turmeric Powder - 1 tsp
Asafoetida - a pinch
Salt to taste
Ginger - 2 tsp, julienned

Method:
1. Heat the oil in a kadai.
2. Reduce the heat, add the dry red chillies, cumin seeds, onions, garlic, red chilli powder, turmeric powder and asafoetida.
3. Stir fry for 2 to 3 minutes.
4. Add the tomatoes and cook for 2 minutes.
5. Add the spinach and stir fry.
6. Sprinkle salt and cook covered over low heat for 6 to 7 minutes.
7. Garnish with ginger.
8. Serve hot.
