Matar Ki Puri Recipe
Ingredients:
Refined Flour (maida) - 3 cups
Vegetable Oil - 2 tbsp
For the Filling:
Green Peas - 400 gms, shelled, ground to a smooth paste
Ghee - 2 to 3 tbsp
Asafoetida - a pinch
Salt to taste
Sugar - 1/2 tsp
Bicarbonate of soda - a pinch
Method:
1. To make the filling, heat the ghee in a pan.
2. Add all the ingredients and saute till the mixture leaves the sides of the kadai and is not sticky to touch.
3. Remove and divide the mixture into 15 portions.
4. Rub 1 tbsp oil into the refined flour and knead the mixture with enough water into a soft dough. 5. Divide the dough equally into 15 portions.
6. Take a portion of the dough, make a hollow in the centre and fill a portion of the green-pea mixture.
7. Fold over the edges to seal the filling inside.
8. Repeat till all are done.
9. Cover the stuffed balls with a moist cloth and keep aside for 10-15 minutes.
10. With the help of dry flour, roll out each ball into a thin disc of 10” diameter.
11. Roast the disc on a griddle (tawa) on both sides using 1 1/2 tsp of oil.
12. Remove and repeat with the other discs. Cover with aluminum foil.
