Rajasthani Panchmela Dal Recipe

Ingredients:
Cauliflower - 1, small, cut into florets
White Radish - 2, medium, peeled, cut into 1/2 inch cubes
Cucumber - 1, peeled, cut into 1/2 inch cubes
Bottle Gourd - 1, small, peeled, cut into 1/2 inch cubes
Parwar - 6-7, peeled, cut into 1/2 inch cubes
Red Pumpkin - 250 gms, peeled, cut into 1/2 inch cubes
Spinach - 200 gms, chopped
Tomatoes - 200 gms, chopped
Capsicum - 200 gms, finely chopped
Vegetable Oil - 4 tbsp
Panch Phoran - 1 tbsp
Ginger - 1, one and half inch piece, julienned  
Green Chillies - 5 to 6, slit
Salt to taste
Turmeric Powder - 1 tsp
Red Chilli Powder - 1 tsp
Mango Powder - 1 tsp
Garam Masala - 1 tsp

Method:
1. Heat the oil in a kadai.
2. Add the Panch phoran, ginger and green chillies. Saute for a minute.
3. Add all the vegetables except the tomatoes and capsicum.
4. Add salt and turmeric powder. Cook covered, on low heat, till the vegetables are well done.
5. Add the tomatoes, capsicum, red chilli powder and mango powder.
6. Saute for 2-3 minutes till well mixed.
7. Remove the kadai from the heat, add the garam masala, mix well and serve hot.
