Onion Rice Recipe
Ingredients:
Cooked Rice - 1 cup
Oil - 2 tblsp
Cumin Seeds - 1/2 tsp
Black Peppercorns - 1 tsp
Cloves - 2
Black Cardamoms - 2
Bay Leaf - 1
Onions - 2, medium sized, chopped
Ginger - 1 inch piece, grated
Salt to taste
For Garnish:
Onion - 1, small, sliced and deep fried
Coriander Leaves - 1 tblsp, chopped
Method:
1. Heat oil in a heavy based pan over moderate heat.
2. Sprinkle cumin seeds and when they splutter, add the remaining spices and bay leaf.
3. Stir once or twice for a few seconds.
4. Add onions and ginger.
5. Fry till light brown.
6. Add rice to the pan.
7. Mix in salt and stir well.
8. Garnish with friend onion and coriander leaves.
9. Serve hot.
