Sweet Milk Pongal Recipe
Ingredients:
Raw Rice - 1 cup
Ghee - 2 tblsp
Milk - 4 cups
Water - 4 cups
Fresh Coconut - 2 tblsp, grated
Powdered Sugar - 1 1/4 cup
Cardamom Powder - 1/2 tsp
Saffron - 2 pinche
Pacha Karpooram (Borneal Flakes) - 1 pinch
Almond or Cashew - fried, as desired
Method:
1. Wash rice. Drain and spread on a cloth for 2 hours to remove excess moisture.
2. Heat little ghee in a pan.
3. Roast rice in it until golden in colour.
4. Boil milk with water in another stove.
5. Pour boiled milk on top of the fried rice and cook.
6. Stir in between and cook in medium flame.
7. When 3/4th cooked, add grated fresh coconut.
8. When rice is cooked properly it turns thick and mushy.
9. Add powdered sugar.
10. Stir for few minutes in low flame and remove from fire.
11. Soak saffron in hot milk for 1 hour to dissolve and add to pongal along with cardamom powder, pacha karpooram, fried almond or cashew nuts.
12. Mix well and serve.
