Ingredients:
Mixed Vegetables - 4 cups, cubed (carrot, potato, french beans and shelled peas)
Cheese - 1 1/2 cup, grated
Butter - 4 tblsp
Flour - 3 tblsp
Milk - 3 to 3 1/2 cups
Ligh Cream - 1/2 cup (optional)
Mixed Fresh Herbs - 1 tsp, minced
Pepper Powder - 2 tsp
Salt to taste
Bread Crumbs - 1 1/2 tblsp

Method:
1. Boil vegetables with some salt and just enough water. See that it does not over cook.
2. To prepare white sauce, melt 3 tblsp butter on low heat, add flour and fry till light pink in colour. Add milk gradually, seeing to it that no lumps are formed.
3. Simmer on low heat till mixture gets thick.
4. Remove from fire, add 3/4 of grated cheese, minced herbs, beat cream, add to sauce along with seasonings.
5. To cheese sauce, add cooked vegetables and mix thoroughly.
6. Pour this mixture into a casserole dish, well greased.
7. Sprinkle top with the rest of the cheese and bread crumbs.
8. Dot with butter and bake at 400F for 20 to 30 minutes or till top is browned.
9. Serve as a main dish with soup and toast.
