Potato Rabri (Aloo Kheer) Recipe
Ingredients:
Potato - 1, large
Milk - 8 cups
Kesar - a large pinch
Sugar - 1 cup
Cashew Nuts or Almonds - 12
Cardamoms - 5 to 6
Almond Essence - a few drops
Method:
1. Wash, peel and grate potato on a very fine grater to get about 1 cup of gratings.
2. Wash the gratins in cold water 2 to 3 times to remove all starch.
3. Soak kesar in very hot milk.
4. Grate 8 of the nuts fine, chop the rest, keep both separate. Powder cardamoms.
5. Boil milk and, while boiling, add potato gratings.
6. Continue to boil on low heat for some time.
7. Add grated nuts and sugar.
8. Boil briskly for some time while stirring all the while.
9. When sufficiently thick, add powdered cardamom, almond essence, mix thoroughly and remove from fire.
10. Pour rabri into a bowl, garnish with chopped nuts.
11. Serve hot or cold.
