Kosha Mangsho (Bengali Mutton Curry)

Ingredients:
Mutton – 500 gms, chopped into small pieces
Onion – 1, finely chopped or grated
Ginger Garlic Paste – 2 tsp
Red Chilli Powder – 1/2 tsp
Turmeric Powder – 1/4 tsp
Sugar – 1/4 tsp
Hung Curd – 1 cup
Salt as per taste
Mustard Oil – 1 1/2 tblsp
Cumin Seeds – 1/2 tsp
Green Cardamom – 2
Cloves – 2
Cinnamon – 1/4 inch stick

Method:
1. Heat oil in a pan.
2. Add the cumin seeds, cardamoms, cloves and cinnamon.
3. Fry for 30 to 60 seconds.
4. Add the onions and saute well.
5. Add the ginger garlic paste and stir-fry for a minute.
6. Add the red chilli powder, turmeric powder and stir to mix well.
7. Add a little water and cook for 2 minutes.
8. Add the mutton pieces and fry them till rich brown and well coated with the masala.
9. Add sugar and fry for another 2 minutes.
10. Add a little water and stir to mix well.
11. Reduce flame to low and add the curd.
12. Gently mix well and add salt.
13. Cover the pan with a lid and simmer on low flame for 90 minutes or till the meat is tender.
14. Remove and serve hot with rice.
