Kosha Mangsho Recipe

Ingredients:
Mutton - 500 gms, cut into pieces
Mustard Oil - 1/4 cup
Cloves - 4
Green Cardamoms - 4
Cinnamon - a small piece
Onions - 1/2 cup, grated
Ginger Garlic Paste - 1 tblsp
Chilli Powder to taste
Turmeric - 1/2 tsp
Cumin Seeds - 1 tsp, roasted and ground
Hung Curd - 500 gms
Salt - 1 1/2 tsp or to taste
Sugar - 1/2 tsp (optional)

Method:
1. Heat oil and add cloves, cardamom and cinnamon.
2. Add onions and sauté till soft.
3. Add ginger-garlic paste, chilli powder and turmeric and stir fry till well mixed.
4. Add the meat, stir fry over high heat till opaque.
5. Lower the heat and saute till fat separates.
6. Add curd, cumin and salt and saute till fat separates again.
7. Cover tight and cook over very low heat, till it gets cooked through in its own juices.
8. Serve hot.
