Baked Cauliflower in Cheese Sauce Recipe

Ingredients:
Cauliflower - 1, large
Juice of 1 Lemon
Cheese - 1 cup
Cream - 1/2 cup (optional)
Salt to taste
Almonds - 1 tblsp, chopped
Butter - a little
Breadcrumbs - 1 tblsp

For White Sauce:
Butter - 3 tblsp
Flour - 3 tblsp
Milk - 2 1/2 cups
Onion - 1, small, minced
Green Chilli - 1, minced
Parsley - 1 tblsp, minced
Pepper - 1 tsp

Method:
1. Wash cauliflower thoroughly, place on a trivet and pressure cook without weight for 5 minutes or till it has turned tender but crunchy.

2. To prepare white sauce, melt butter, add minced green chillies and onion.
3. Fry till onion turns a light pink colour.
4. Add flour, stir fry till light brown in colour.
5. Remove from fire, add milk gradually, stirring all the while so that no lumps are formed.
6. Put back on fire and cook to custard consistency.
7. Add salt, pepper, parsley, 1 cup cheese, slightly beaten cream and mix everything thoroughly.
8. Place the cooked cauliflower in the centre of a well greased dish.
9. Take a little of the white sauce in a teaspoon and place it in-between the florets.
10. Pour the rest of the sauce covering the cauliflower completely.
11. Sprinkle rest of the cheese, chopped almonds, dot with some butter and breadcrumbs.
12. Put the dish under a grill for cheese to melt and the top to brown.
13. Serve as a main dish.

Note: If you are not using cream, add extra 1/2 cup of milk to sauce.
