Keerai Pachadi Recipe

Ingredients:
Spinach - 4 cups, chopped
Onion - 1 medium, chopped
Green Chillies - 3
Coconut - 2 tblsp, grated
Curd - 2 to 2 1/2 cups
Salt to taste

For Seasoning:
Oil - 1 1/2 tblsp
Mustard - 1/2 tsp
Cumin Seeds - 1/2 tsp
Red Chilli - 1, broken
Curry Leaf - 1 sprig

Method:
1. Cook spinach with 2 cups of water along with salt. When cooked, mash thoroughly with a wooden spatula and set aside.
2. Grind green chillies and coconut to a rough paste.
3. Heat oil, add seasonings in the order given.
4. When done, add onion and fry till browned.
5. Add ground paste, stir fry for 1 to 2 minutes.
6. Add mashed spinach and cook till dry. Cool.
7. Beat curds smooth and add to the spinach, mix.
8. Serve with rice or chapatis
