Doodh Pouva Recipe
Ingredients:
Milk - 2 1/2 cups
Cream - 1/4 cup
Sugar - 3 tblsp
Pouva (Flaked Rice) - 1/2 cup
Almonds - 20, blanched, skinned and very finely sliced
Pistachios - 15, shelled and very finely sliced
Cardamoms - 5, shelled and powdered
Nutmeg - 1/2 tsp, powdered
Vanilla Essence - 3/4 tsp
Method:
1. Clean and wash pouva.
2. Give one boil to milk.
3. Remove 1/4 cup milk and add to cream. Keep aside.
4. In rest of milk add sugar and cook till sugar is melted.
5. Give one more boil to milk then add pouva and keep stirring till mixture is slightly thickened.
6. Add almonds and pistachios and simmer for 5 minutes.
7. Remove from heat and when bubbling stops, add cream.
8. Cool, then add cardamom, nutmeg and vanilla.
9. Mix well and refrigerate till required.
10. Serve cold.
