Ingredients:
Lima Beans – 250 gms (surati papdi)
Purple Yam – 250 gms, cubed
Brinjals – 250 gms (surati rawaiya)
Sweet Potatoes – 250 gms, sliced thickly
Small Potatoes – 250 gms, peeled
Ripe Bananas – 2, sliced thickly
Milk – 200 ml
Tuvar Beans – 100 gms
Oil – 60 gms

For the Masala:
Coconut – 75 gms, grated
Coriander Leaves – 250 gms
Asafoetida – 1/2 tsp
Green Chilli Paste – 10 to 12
Ginger Paste – 1 tblsp
Garlic Paste – 30 gms
Sugar – 30 gms
Salt as required
Cumin Seeds – 1/2 tsp
Mustard Powder – 1/2 tsp
Red Chilli Powder – 1 tsp
Turmeric Powder – 1/2 tsp

Method:
1. Slit the surati papdi.
2. Slit the brinjals and potatoes such that the two parts do not separate.
3. Heat the oil.
4. Add the cumin seeds and mustard seeds till they crackle.
5. Add the asafoetida, ginger, garlic paste and coconut and cook for 2-3 minutes.
6. Add the brinjals, potatoes, sweet potatoes and yam and cook covered till done.
7. Add the turmeric powder, salt, chilli powder, sugar and bananas.
8. Cook again for 10 minutes.
9. Garnish with chopped coriander leaves.
10. Serve hot.
