Aviyal Recipe

Ingredients
Mixed Vegetables (while pumpkin, beans, carrots, cauliflower, potato)
Salt to taste

For Masala
Coconut - 1/2 cup
Yogurt / Curds - 1/4 cup
Jeera Seeds - 1/2 tsp
Ginger - A small piece
Green chillies - 2 or 3
Turmeric powder - a pinch
Coriander / Cilantro leaves - 2 tsp

For Tempering
Oil - 1 tsp
Mustard seeds - 1/2 tsp
Hing - a pinch
Red chillies - 1
Curry leaves - 5 to 6

Method
1. Boiled the vegetables and keep aside.
2. Grind all the masala ingredients.
3. Take a pan and add the vegetables and masala.
4. Bring to boil on low flame
5. Add salt and saute well
6. If it is medium thick remove from the flame
7. Heat a small pan add oil, mustard seeds and allow to splutter.
8. Then add hing, chillies & curry leaves
9. Pour into Aviyal and serve hot with plain rice or chapathi

Authentic avial does not have ginger, cauliflower at all and there is no tempering absolutely and coconut oil is a must. This recip[e is certainly not authentic avial.
