Sprouts Kurma Recipe
Ingredients:
Sprouted Green Gram - 2 cups
Small Onions - 12, peeled
Garlic - 7 flakes
Tomatoes - 2
Tamarind - small gooseberry size
Fresh Coconut - 3 tblsp, graetd
Salt - as required
Jaggery - little (optional)
Fry in Oil
Red Chillies - 6
Coriander Seeds - 1 tblsp
Bengal Gram Dal - 1 tblsp
Poppy Seeds - 1 tsp (dry roast separately)
Method:
1. Steam cook sprouts for 3 minutes in a pressure cooker.
2. Cut tomatoes finely.
3. Soak tamarind in little water and take thick extract.
4. Dry grind roasted poppy and fried spices along with coconut.
5. Add water at the end and grind to a smooth paste.
6. Heat little oil and fry garlic, small onion till golden.
7. Add chopped tomatoes and stir till moisture is absorbed.
8. Mix ground paste, salt, jaggery and keep stirring till good aroma comes.
9. Pour tamarind extract and steam cooked sprouts.
10. Cook till gravy becomes thick.
11. Serve hot.
