Masala Powder Dosa Recipe

Ingredients:
Raw Rice – 3 cups
Boiled Rice – 1 cup
Urad dal – 1/2 cup
Salt as per taste
Oil for roasting
Water as required

For Masala Powder
Coriander seeds – 1 tblsp
Black urad seeds – 1 tblsp
Bengal gram dal – 1 tbsp
Asafoetida – 1/2 tsp
Sesame or Gingelly seeds – 1 tsp
Dry Chillies – 8
Dry Coconut – 1 tblsp, grated
Salt as per taste

Method:
1. Dry roast the sesame seeds in a small kadai. Remove and set aside.
2. Lightly fry all the other masala ingredients except the salt and dry coconut in 1/2 tsp of oil.
3. Switch off the stove and add dry coconut gratings and mix well.
4. When the mixture cools down, add salt and dry grind to a slightly coarse powder.
5. To make the dosa batter, thoroughly rinse and soak the raw rice, boiled rice and urad dal together in sufficient water for about 3 hours.
6. Grind the soaked lentil and rice with a little water to make a smooth batter.
7. Add salt and allow the batter to ferment overnight.
8. Pour a spoonful of batter onto a preheated tawa and evenly spread to a thin round. Pour a tsp of ghee or oil all around it.
9. Sprinkle the masala powder on the dosa.
10. Brush a little oil and reduce the flame.
11. Do not turn the dosa. Roast on only one side.
12. Remove from heat and serve hot.
13. Serve with coconut chutney or any chutney of your choice.
