Papaya Kofta Curry Recipe
Ingredients:
For Curry
2 Potatoes, medium, peeled and cubed
3 Bay leaves
1 tsp Garam Masala
1 tsp Sugar
4 Red Chillies
2 Onions, big
2 Tomatoes, large, grated
1/2 cup Curd
1/2 tsp Cumin seeds
1 small piece Cinnamon
2 Cardamoms
2 Cloves
Salt to taste
For Koftas
1 raw Payapa, medium
1 Green Mango, medium
3 tblsp Gramflour
3 Green Chillies
1 small bunch of Coriander leaves
1 inch piece Ginger
a few Mint leaves
Salt to taste
Method:
1. Peel and grate both mango and papaya finely and squeeze out the juice.
2. Grind chillies, coriander, mint and ginger to a paste.
3. Form the mixture into oblong shaped balls and deep fry them to a golden colour.
4. Heat 4 tblsp of oil and put in all the whole spices and onions and fry lightly.
5. Add potatoes and fry nicely.
6. Put in sugar, salt, tomatoes, curd with the remaining spices and cook till dry.
7. Cover with water and cook till the potatoes are done.
8. Pour the curry over koftas, sprinkle garam masala and coriander leaves on top.
9. Cover and serve after 5 minutes.
