Oondhiu Recipe

Ingredients:
225 gms Potatoes
225 gms Sweet Potatoes
225 gms Small Brinjals
115 gms Yam
3 Ripe Bananas
1 bunch Methi leaves
1 bunch Coriander leaves, chopped
115 gms Beans
115 gms Double Beans (papdi)
115 gms Gramflour
1/2 Coconut
1 inch piece of Ginger, ground
8-10 cloves Garlic
3-4 green Chillies
1 Lemon
2 tsp Chilli powder
1/2 tsp Turmeric powder
2 tsp Sugar
a pinch of Soda Bicarb
1/4 tsp Asafoetida
Oil for cooking
Salt to taste

Method:
1. Peel yam, potatoes, sweet potatoes. Cut the yam and sweet potatoes into 1 inch pieces.
2. Remove the stems from the brinjals. Cut bananas into two pieces each, without removing the skin. Slit the potatoes, brinjals and bananas into quarters, half way down, only.
3. Clean methi leaves, sprinkle with salt and keep aside.
4. Clean the double beans and string the beans.
5. Mix salt, a pinch of turmeric, chilli powder, a little oil, methi leaves and gramflour. Add a little water to form a stiff paste. Make balls from this paste. Fry till brown and keep aside.
6. Mix together, grated coconut, chopped coriander leaves, garlic, ground ginger, green chillies, sugar, soda bicarb and asafoetida. Mix well. Divide into three portions.
7. Stuff slit brinjals, potatoes and bananas with two portions. Smear yam and sweet potatoes with the remaining portion, setting aside about 1 tsp of the masala.
8. Heat oil in a shallow pan, add masala and fry well. Add 300 ml water. When it boils, add double beans, beans and a pinch of soda. Cook for a few minutes.
9. Add stuffed brinjals and cook for 10 minutes. Add potatoes, sweet potaoes and yam cubes. When nearly done, add fried gram balls and stuffed bananas. Cook till done.
10. Serve hot.
