Chocolate Truffles Recipe
Ingredients:
500 gms Dark Cooking Chocolate
2 tbsp Instant Coffee Powder
6 tbsp Boiling Water
250 gms Unsalted Butter, chilled
3 tbsp Rum or Brandy
1 tbsp Almonds, ground
Cocoat - to coat
Method:
1. Put the chocolate in a pan along with the coffee and water and melt it over a pot of simmering water.
2. Cut the butter into small cubes and add one cube at a time to the chocolate, beating well.
3. Beat in the rum/brandy and the almonds.
4. Chill in the refrigerator until the chocolate starts to fim up and then shape it into balls. Roll each ball in cocoa till completely coated.
5. Place the truffles in small paper cases in an airtight container. In hot weather, keep them refrigerated.
