Hara Pulao Recipe
Ingredients:
Long grain rice - 1 cup
Cauliflower - 1 cup, chopped
Green peas - 1/2 cup
Potatoes - 1 cup, cubed
Cloves - 3
Cinnamon stick - 1 inch piece
Cardamom - 3
Whole black pepper - 6
Onion - 2, chopped
Lemon juice - 3 tbsp
Thick cream - 4 tbsp
Paste of 1 cup green coriander leaves, 1 cup mint leaves, 3 green chillies and 4 cloves garlic - 4 tbsp
Vegetable oil
Salt as per taste
Method:
1. In hot oil fry cloves, cardamoms, cinnamon and black pepper for 1 minute.
2. Add onions and fry till light brown.
3. Add the vegetables and fry for 3 minutes.
4. Add coriander/mint paste and fry on low heat for 2 minutes stirring frequently to prevent sticking.
5. Add rice and 2 1/4 cups water.
6. Cook on medium heat. When almost cooked add cream and lemon juice and stir gently.
7. Cook covered for 3 minutes and serve hot.
