Vegetable Pakora Recipe
Ingredients:
Gram flour - 1 cup
Corn flour - 2 tbsp
Hot oil - 2 tsp
Baking powder - 1/4 tsp
Cumin powder - 1 tsp, ground
Green chillies - 1 to 2, chopped (optional)
Potato slices - 1 cup, blanched and chopped
Cauliflower - 1/2 cup, finely chopped
Carrot - 1/2 cup, shredded
Onion - 1 cup, sliced
Water as required
Oil for frying - 2 cups
Salt - 1 tsp
Method:
1. Mix the gram and corn flour with oil, baking powder, cumin powder, water and salt and beat well by hand or in a blender for 2 minutes. The batter should be thick and fluffy.
2. Rest the batter for 1 to 2 hours.
3. Mix in all the vegetables evenly.
4. Deep fry in 2 cups of hot oil.
5. Remove with a slotted spoon and place on paper towels.
6. Serve hot with green chutney or tomato ketchup.
