Chicken Satay Recipe
Ingredients:
Boneless chicken breast - 500 gms
Whole coriander seeds - 1 tsp
Whole cumin seeds - 1 tsp
Turmeric - 1 tsp, ground
Shallots - 3 to 4, peeled and sliced
Fresh lemongrass - 1 stalk
Ginger - 1/4 inch piece
Garlic clove - 1, smashed
Sea salt - 1/2 tsp
Sugar - 2 tsp
Bamboo skewers - 20
Cooking oil -2 tbsp
Method:
1. In a pan, dry roast the coriander and cumin seeds and then pound using a mortar and pestle. Keep aside.
2. Slice the chicken into medium sized pieces.
3. Marinate the chicken with the spices, ginger, garlic, shallots, turmeric and lemongrass. Keep overnight.
4. Before cooking, soak the bamboo shoots in water to avoid them from burning.
5. Put 3 chicken pieces onto each skewer and grill.
6. Serve with rice and cucumber salad.
