Spicy Minced Chicken with Mint and Toasted Rice Recipe
Ingredients:
Boneless chicken - 150 gms
Peanut oil - 1 tbsp
Garlic - 6, minced and formed into a paste
Lemongrass - 1 stalk, chopped
Shallot - 1, chopped
Green onions - 2, chopped
Fresh mint leaves - 1/2 cup
Ginger - 2 small pieces
Dried thai chillies - 2 to 4 tsp
Fish sauce - 3 tbsp
Lime juice - 6 tsp
Sugar - 1 tsp
Roasted rice - 2 tbsp, ground
Assortment of raw or lightly steamed vegetables
Method:
1. Cook the chicken in the oil until thoroughly cooked.
2. Toast the ginger and thai chillies in a dry pan until it begins to char and then dry grind into a fine powder.
3. In a bowl, mix garlic, mint leaves, lemongrass, shallot and green onions.
4. Toss the cooked chicken with the mixture and the ginger and chilly powder.
5. Now add the fish sauce, lime juice and sugar and mix well.
6. Finally add the roasted rice and mix.
7. Serve with steamed vegetables.
