Kesari Phaldari Phirni Recipe

Rice batter – 150 gms
Milk – 1 litre
Cardamom powder – 1/4 tsp
Saffron – 1 pinch, soaked in lukewarm water
Sugar – 100 gms
Chopped pistachios – 1/2 tsp
Varak – 2
Strawberry – 100 gms, diced (you can use any other fruit of your choice)

1. Boil the milk adding the cardamom powder.
2. Add the rice batter and stir until rice is cooked and the milk begins to thicken.
3. Stirring continously, dissolve in the sugar.
4. Cool the mixture.
5. Now add the saffron and mix well.
6. In a moul, pour the mixture and layer with the strawberries.
7. Garnish with chopped pistachios and serve cold.
