Ingredients:
Lamb - 500 gms, minced
Garam masala - 1/4 tsp
Garlic paste - 1 tsp
Raw papaya paste - 1 tbsp
Ginger paste - 1 tsp
Cashew nut - 2 tbsp, crushed
Thick cream - 2 tsp
Onion - 2 medium
Rock salt - 2 tbsp
Carm seeds/Ajwain - 2 tsp
Dried mango powder - 2 tsp
Cumin seeds - 3 tbsp
Dry ginger - 1 tbsp
Black pepper - 1 tsp
Nutmeg powder - 1/2 tsp
Brown food colour if desired

Method:
1. Clean the minced meat and strain.
2. In a bowl, mix all the ingredients to the minced meat and knead well to form firm dough. Keep aside for 1 hour.
3. Now shape the dough into balls with your fingers.
4. Heat the oven or the skewer and place a ball of meat on the skewer and carefully flatten along the length.
5. Repeat the process on all the skewers..
6. Now place the skewers into the oven, rotating occasionally.
7. As a golden brown layer forums on the meat mixture, remove from oven and take out on a plate.
8. Shallow fry the kebabs in 2 tsp oil.
9. Sprinkle some chaat and lemon juice on the kebabs.
