Kashmiri Mutton Curry Recipe

Ingredients:
Mutton - 1 kg
Ginger powder - 1 tbsp
Saunf powder - 1 tbsp
Cinnamon - 2, 2 inch pieces
Curd - 250 gms
Khoya - 100 gms, ground to a powder
Sugar - 1 tbsp
Milk - 250 ml
Cumin seed powder - 1 tsp
Green cardamom - 12, crushed
Ghee - 100 gms
Water as required
Salt as per taste

Method:
1. Wash and cut mutton into small pieces. Cook the mutton along with the ginger powder, aniseed powder, cinnamon and enough water till done.
2. Blend together curd, khoya, sugar, cumin seed powder, cardamom and salt.
3. Add this to the meat and mix well. Lower the heat and add cold milk, stirring continuously.
4. Simmer for 15 minutes. Finally add the ghee. Simmer on low heat for another 10 minutes.
5. Serve hot with rice.
